March 8, 2018: Whole Hog Butchery Class
This is a demonstration class where students will watch butcher and charcuterer Charles Lee break down a whole hog from tail to snout. Students will learn to utilize every part of the hog, from head to trotter and shoulder to ham. Don’t forget your camera! There will be meat to take home.
