News from the Farm Front

1. SALE- Boneless Pork Tenderloins

Every day Jamie announces that the grass is greening up! Partly true and partly wishful thinking- got to be positive about spring being just around the corner. He is just as excited as the cows will be once they graze the new spring growth. Calving has started and we have three healthy calves so far that have wonderful mothers taking care of them. It feels like Christmas morning everyday as we anticipate their arrival.

1. SALE- Boneless Pork Tenderloins. These are the thick boneless loins folks which we usually sell for $10/lb. Stop by the farm store to take advantage of this sale today (Thursday Feb 28th) or next week (Thursday March 6th) and stock up on this delicious cut of pork for only $7.50/lb!

Recipe: Marinate tenderloin with Soy Sauce, Honey, and Black Pepper for 30 minutes. Preheat oven and bake tenderloin at 350 degrees for 40 minutes or until cooked thoroughly. Soy sauce and honey make the perfect flavor balance for pork.

2. We’ve done it every year since we started our business back in 2000 and don’t really feel like things would be right if we didn’t have our annual bulk beef sale. So if you are one of those people who called last November looking for a quarter side and we were sold out – PERK UP- the time to order is now. Our business has grown into a nice mixture of wholesale and retail but we realize the value of having a freezer full of grass fed meat at bulk prices. We have set aside 8 steers for this annual event which means 32 quarters. Quarter sides of beef weigh in the 75-90 lb range and are $5.50/lb. We require a $50 deposit with each order, accepted by cash, check, or credit card. Order now and pick up your beef in August or September. We’ll keep you posted the details of cutting instruction options and pickup dates.

Current Bulk Beef Options: The 20 lb box ($130) and 60 lb box ($360) of beef are available year around. This includes steaks, roasts, and ground beef in various quantities. Check our website www.springhousemeats.com for more information.

3. New Offerings: Beef Jerky and Summer Sausage are back, a hearty, locally raised snack for your next road trip, hiking excursion, or care package to college students. Beef Jerky is $7/lb.
Our Summer Sausage is a nice addition to any cheese and cracker and goes for $5-8 per package. Stop by the farm store to try some today.

4. If you start to feel hungry while touring the flowers this spring at the Biltmore Estate stop by the Stable Café for a Hickory Nut Gap Hamburger. Grassfed, hormone and antibiotic- free beef that lived the good life here on the farm.
